server: Port to use libcamera

port-to-libcamera into main

Simplify the launcher and just copy over the libcamerasrc plugin in usr/local. Initialize libcamerasrc element the same way as the camera demo does.

cc @ocrete this needs testing on device and tweaking as needed.
